Coffee Profiteroles

I made some pastry cream the other day because I had to use up some extra egg yolks. What best way to use up the pastry cream than to make some profiteroles? 

I flavoured the pastry cream with coffee emulco and topped them with whipped cream too. Really good, a little salty when complemented the sweetness really well.

Orange Chiffon Cupcakes Bouquet

I am so excited about Mothers' Day project. As usual, I was stalking some blogs and saw a really lovely cupcakes bouquet! I shall try this! However, my variation will be orange chiffon cupcakes. I have just bought the pots and sponge, fingers crossed! Looking forward! 




Look! They're so pretty! Totally satisfied! I hope the mothers love them! I was worried that the buttercream can't hold through the journey to the mothers' place, but they did! They're so pretty, I can't even...

Feeling reflective

Sometimes, I want to rant and today, I wanted to talk about toxic people and how we should avoid them. You know, the kind that bring out the worst in you? The kind that you scoff at and don't want to be associated with? Yes, we all know this kind of people.

However, before I do that, I reflected and realised I may well be toxic too, so before I judge, let my heart be checked and let Holy Spirit's soft prompting work such that my heart be softened and I be teachable that before I condemn anyone that I look within myself. Many times, we are too quick to see others' fault, but fail to realise that we too reflect the same flaw we scorn upon. 

Father, let me learn to love my neighbors as myself, the same message that is repeated to me time and again, that I realise the stir in my heart every time I harbour resent towards anyone, that peace be restored again. Amen. 

Green Tea Chiffon Cake 3 Ways

So I bought so much green tea that I need to use by October, I'm going to be exploring everything green tea now. The green tea powder is of very good quality though, thanks to a close friend who bought in bulk and shared the good deal with me!:)

First bake with this green tea powder is in celebration of finishing all the work for this weekend! Yea! Sadly, the body is shutting down too and my tonsils are swollen again! But! That don't stop me from baking! Here you go, green tea chiffon 3 ways, simply because I only have 1 muffin tin.

Iced Gems

Fascinated by these pretty gems, I bought all the necessary ingredients and waited in anticipation for a window where I have a bit of free time to bake these cuties. 

It's so simple to bake and I remember these pretty gems I used to eat as a child, biting off the sugar top and throwing the biscuit base back. So gross, I know, but I was little then. 

So here I am, an adult now, but trying to reminisce the good old times where simple cookies like these can make my day. They still do, of course, but it takes a lot more to make my day. 





The biscuit base is not the traditional and a lot more fragrant because it is more of a short bread kind. It's a nice variation and I will be baking for my nieces and nephews soon! Stay tuned!

Rose Pistachio Cranberries Biscuits

Labour Day bake shall be rose pistachio and cranberries biscuits. I saw a recipe which used real rose petals as one of the ingredients. Honestly, I find rose flavour a bit intimidating because if not done properly, the taste will be overpowering and taste 'cosmetic'. However, I think real rose petals may be nice because I love the subtle fragrance from the Rose tea I have sometimes. 

And so I set out to hunt for dried rose petals and they are so difficult to get! After much research, I managed to hunt down dried rose petals, but at an exhorbitant price of about $13 for less than a cup! I guess I'll have to look harder because I really do not want to sacrifice the taste for cheaper way of just adding rose extract. 

The subtle rose fragrance is really faint, I think I'll soak them for a shorter time, but first, I'll find more affordable ones first. Love the pistachio and cranberries in every bite though and the luxurious presence of the rose petals enhance it all, no matter how faint the fragrance is hahahhaha.
