Wind Torte Easter Spin

Inspired by an episode on The Great British Bakeoff, I wanted to try the wind torte which is made from meringues, French and Swiss meringues. It's so pretty with the fondant violets. Waited a week before I had time to try. I did a Easter spin to the Spanish cake and I must say it's a really unique cake. The cake structure is solely meringues and the filling cream and strawberries. To add a Easter spin, I added Easter eggs. There's also a lid to cover the filling. The violets stand out from the white meringues and it looks really delicate and pretty. It's pretty hard work though, took me 4 hours. Here's the final product.

I'll probably bake this again many months from now . With less sugar, it's way too sweet.

Yuzu Pudding

Got down to making another pudding, yuzu flavour. It's not as rich as the Ondeh ondeh pudding, it's light and refreshing. It's really healthy given the small amount of sugar and the main ingredient being milk. Will make the macha one real soon:)

Ondeh Ondeh Pudding

So I bought another much coveted baking essential, okay, so it's not really an essential. I bought pudding bottles! And of course, I must utilize them, so I went on to research on how to make puddings. I thought macha azuki pudding, milk pudding, yuzu pudding, etc.

In the end, I decided on Ondeh ondeh pudding because I have some Ondeh fillings left. It's really good! And pudding like, I was a bit concerned about the 4 tsp of gelatine powder, which to me was quite a big amount, but, turned out to be just nice. :) I'll make them again, probably the other flavours that I thought about. ;)

Happy birthday fruit tart

It's my sis's bdae and she likes tarts, so here's a happy bdae fruit tart for her, with fruits spilling over. I mean, it's a birthday tart, so I decided to fill it generously. It's healthy since there're so much fruits, right?

Some mini tarts to use up the dough and the fruits.

A Piano Cake

I accepted another challenge from a supportive friend, to bake a piano cake. And so I researched piano cake and thought maybe I could pull it off. Happy to say I did it even though it looked a tad messy because I did the Rice Krispies for the piano structure myself. My first time working with Rice Krispies, not bad for a first time. Here's the product.

I had to take it at many angles hahha it was hard work but immense satisfied with the end product. Of cos the cake had to be good. It's the Ondeh ondeh sponge cake. :)

It's been a crazy week of afternoon commitments and finally I get to bake! Here's a Ondeh ondeh pound I am experimenting and a Japanese soufflé cheesecake I baked for my nephew.

And a good friend came and we baked cheesecake together. Here's her takeaway.
