“Peace I leave with you; my peace I give you. I do not give to you as the world gives. Do not let your hearts be troubled and do not be afraid.”
John 14:27 NIV

Be still, my heart.

🐷🐷 mooncakes

And I succumbed. Resisted buying mooncake mould for a long time and I finally gave in. However, I got distracted researching traditional mooncakes and found these cute piggies. How can I pass this chance to bake some? So here they are! Presenting.... Piggies mooncakes.

Aren't they cute?

Alright! Settled my curiosity and bimbo desire to try all things cute. Back to traditional mooncakes soon!

Mango Chiffon

The holidays are ending. No! Don't go, my holidays! I baked so much this holiday that I think I seriously need a break. Before I take a break, here's a mango chiffon cake for 2 birthday girls.

Everybody thought it's a yam cake, maybe I should bake one that is yam flavoured soon.

Pretty!

They're so lovely! I asked for 2 items and I got all of those below! So lovely, I cannot bear to use them. I want to save them for people special to me and I just don't know when I'll use them.

On another note, I had an order for Ondeh Ondeh cake and this must be the flavor I have repeated the most number of times. I get bored easily and I rarely repeat a bake. I like how they're so well recieved though. I've another baking session for this flavour tomorrow by the way. Pretty bored with them. Haha.

Exploring a mango flavour cake these 2 days, updates soon.:)

Horlicks Chiffon Cake

Flavour of the week is Horlicks, so it's Horlicks pudding, Horlicks 小馒头 and now, Horlicks chiffon.

Wanted to bake a birthday cake for a friend and decided to go with flavour of the week, Horlicks.

Then I thought honeycomb may go with the cake and made some, easy to make, but I suspect the high humidity here cause the honeycomb to absorb moisture really quickly.

Honeycomb

They got sticky really fast and nearly ruined the cake. It turned a rusty brown.:(

In an attempt to salvage the cake, I covered with strawberries! Worked ;)

All of my friends could not guess it's Horlicks. I guess the mild malty taste of Horlicks blends with cake so well that it disappears in cream too. Nonetheless, the texture was soft and fluffy.

Baking fun

It's an afternoon of baking fun with close friends from work and 2 children.

We did Nutella brownies and decorated some cakes. It was really fun, the cakes looked a bit strange on their own, but put together, they looked quite nice!

Thankful that we all had fun;)

All together

Basic Milk pudding

Here's the recipe for milk pudding, very versatile recipe. Quick and easy.

300 ml+ 300 ml milk
40g sugar
4 tsp gelatine powder
4tbsp cold water

1. Bloom the gelatine powder in cold water.

2. Heat 300ml of milk and sugar over low heat till sugar dissolves. (Add flavourings like green tea, milo powder, etc if adding)

3. Add the gelatine to the heated milk till well combined.

4. Take the mixture off the heat and add the remaining milk, stirring to combine.

5. Pour the mix into prepared containers and chill till set.

6. Add any toppings of your liking, red beans, crushed Oreo etc.

Here are some flavours I tried

Horlicks ones

Coffee ones

Matcha ones

The possibilities are really endless, be creative! ;)

Horlicks 旺仔小馒头

After the nasty flu, came the annoying cough. It's an enduring flu bug, I must be exhausted.

But! This don't stop me from baking something new. My childhood milk snack, 小馒头:)

It's quite easy to make, just that the dough is a bit sticky and difficult to work with, however, after a while, I got the hang of it. It's Horlicks flavour only because I didn't want to buy the whole pack of milk powder just for 20g. I think I'll have higher chance of using Horlicks rather than milk powder.

Verdict? It brings back memories, only the Horlicks gave a nice twist, quite nice.

Of flowers and weddings

I'm down with a nasty flu, the nose's all blocked and the sneezes just won't stop. :(

Posting some flowers I helped to make for a wedding. The overall in charge, R, is really awesome! When I stepped into the small room, there were so many flowers, it could easily pass off as a floral shop!

It looked easy, but I spent a good 8 hours helping out! I learnt a lot though and an really thankful to have her guide me through this to get these done.

Looking forward to opportunities to practise on my own. :)

Cheese Tarts

Finally! I made them! Passed by Ion and was wondering what the queue was for. Found out later that it was a long, I mean really long queue for the Hokkaido cheese tarts. I don' have patience to queue for so long, so I'll bake some before trying the real deal when the queue cools off. Then I'll know how far apart the recipe is from the real one. Till then, I'm pretty happy with these.

That moment when you Realised you only need 4g more of corn flour and you try to convince yourself 2g is enough, so you don't have to do down just to buy a new packet, and then... Jiang! Jiang! Jiang! You found a new packet of corn flour! Pat myself on the back for having such foresight! Stock up! Though very often I find 2 new Packets of the same thing after having bought a new one. Still...
