Another 'to do' bake struck off the long list I bookmarked. I was attracted to stained glass cookies because they are so pretty, pity I couldn't find bright coloured candies and have to make do with these light coloured ones. Oh well, it's good enough for a first try. It's suitable as Christmas bake and it's easy enough. Recipe's taken from nasilemaklover.
325g cake flour
110g caster sugar
25g corn flour
200g unsalted butter at room temperature
Juice and zest from half lemon
0.5 tsp baking soda
1 bag of hard candies
1. Cream butter and sugar till light and fluffy.
2. Sift cake flour, corn flour and baking soda together and set aside.
3. Add lemon zest and whisk to mix well.
4. Add lemon juice and flour mix to the butter mixture and fold to bring the dough together.
5. Divide the dough into 2 and roll out in between 2 sheets of baking paper into thin sheet and fridge for about 30 min, so the dough is easier to handle.
6. Preheat the oven at 160 degrees and cut into desired shapes using cutters.
7. Bake in preheated oven of 160 degrees for about 10 minutes and then take them out of the oven.
8. Put the candies into the cut out and bake in the oven for another 8 minutes.
9. Cool completely.
